And have a happy, happy, happy, happy, happy Hanukkah!

Today is the start of Hanukkah (or Chanukah) so for the next 8 nights I will be posting something that is Hanukkah related!

Tonight I am sharing a recipe for potato latkes. Latkes are the easiest thing to make – seriously, anyone can do it. Not only are they easy, they are cheap and delicious!! Add some apple sauce, apple butter or sour cream and it is a delectable treat. And very filling too!

Here’s the recipe:


  • 2 cups peeled and shredded potatoes
  • 1 tablespoon grated onion
  • 3 eggs, beaten
  • 2 tablespoons all-purpose flour
  • 1 1/2 teaspoons salt
  • vegetable oil for frying (or whatever you have around)


  1. Grate the potatoes then wring out with cheesecloth or paper towels draining as much moisture as possible
  2. In a medium bowl stir the potatoes, onion, eggs, flour and salt together.
  3. In a large heavy-bottomed skillet over medium-high heat, heat the oil until hot. Place large spoonfuls of the potato mixture into the hot oil, pressing down on them to form 1/4 to 1/2 inch thick patties. Brown on one side, turn and brown on the other. Let drain on paper towels. Serve hot! (Dip in apple sauce, apple butter or sour cream)
